Lemon cake

I'm supposed to bring a dessert to a party on Sat. I will buy something from Marks and Spencer's. But it feels like a complete cop-out not to even try to make one.

I've never made sweet things, all my cooking has been main-course-y, because desert is nice, but I don't care as much as some people. So I might yet try. It should ideally be moist and made ENTIRELY OUT OF LEMONS.

Does anyone want to help me on sat aft...??

Tig's very lemon pudding

low tech pud - I can supply more details if you want

buy a good quality lemon curd (the real stuff)
mild honey
some ready made meringues
mascarpone cheese
1 organic or unwaxed lemon
(you need the peel so don't buy waxed ones - organic have a much stronger scent and flavour)

wash lemon and dry it
finely grate peel from lemon into curd (but save a bit for decoration)
add juice and then add 1-2 spoons warmed honey (to taste)

put the mix in a flatish bowl
spread mascarpone on top
decorate with meringue and sprinkle remaining peel on top

If that isn't enough lemon - buy a second lemon and add some peel and juice to the mascarpone plus sweetening!
